Weightwatchers Trifle

Weightwatchers Trifle for 4 Pro Points 




This is my favorite Dessert ever.  When i first started Weightwatchers this was the dish i missed most of all.  Jelly and sponge, smothered in custard and cream topped with either chocolate or sprinkles and strawberries.  


Sounds too good to be true? Wrong, i made this at Christmas time for dessert to see how it compared and this is deliciously creamy and gooey and low fat to boot and this whole bowl serves 4 so that means there really good portions.  Anyone who knows me will vouch for my trifle addiction you can eat this without any guilt at all. 


This is a must try!

Ingredients


Hartleys Sugar free Jelly




Each sachet serves four and going by the nutritional value on the pack it works out at 2 Weightwatchers Pro Points per sachet


Water as per sachet instructions


1 multipack tube of Devon Low Fat Custard 


6 Trifle Sponge Fingers (I used Tesco own brand, it works out at 1 Weightwatchers Pro Point per 2 fingers


4 30g Tbl of Weightwatchers Cream


4 99 Flakes crumbled


6 Strawberries sliced thinly for decoration


Directions 


Break each finger into four and place in a bowl


Make jelly up as per directions, however i usually make mine using 100mls less cold water as i like my jelly really wibbly wobbly (actual jelly descriptive words)


Pour jelly mix into the bowl with fingers, place in the fridge and allow to refrigerate overnight if possible. 




When jelly is really empty the tube of custard and spoon over until the jelly is covered completely  




Repeat with the cream, decorate with the strawberries and sprinkle with 99 flakes on top.  You could also use hundreds and thousands here, i checked this out and a tbl of them has 0 Weightwatchers Pro Points and they just remind me of being a kid.

Weightwatchers Banana Fritters

Weightwatchers Banana Fritters


OK so checked the blog today and my Weightwatchers Banana Fritters had gone AWOL so am re posting? Not sure at all what happened there but these are too good to loose them so from now on i will remember to save and back up any posts. 


On to these fritter of pure delight.  I changed this up from www.deepsouthdish.com  Its an American site so i readjusted the measurements and also to ingredients i had on hand.  


Serves 6


Weightwatchers Pro Points per serving 3


Weightwatchers Pro Points per recipe 20


Ingredients 


3 tablespoons sweetened desiccated coconut (6 Weightwatchers Pro Points)

3 Tsp cup of light sugar (3 Weightwatchers Pro Points)


3 tablespoons of self rising flour (6 Weightwatchers Pro Points)


1 heaping tablespoon corn flour (1 Weightwatchers Pro Points)


1/2 teaspoon ground cinnamon


240ml of water


2 tablespoons of Flora Proactive or Low Low (2 Weightwatchers Pro Points)


4 to 6 bananas



Directions 


Mix the coconut and sugar in a bowl and set aside.


In a bowl mix the flour, cornflour, cinnamon and water and whisk until combined entirely


In a non stick pan, add the low fat spread to a high heat until it becomes liquid.


Peel, half, and slice bananas lengthwise and dip into the flour mix entirely and then place into the pan




Cook until the underneath is starting to crisp


It will take no more than 3-4 minutes


Turn the fritters over and cook for another 3 -4 minutes




Lift 1 fritter at a time out of the pan and roll in the coconut and sugar mix and plate up


Repeat the process until all fritters are cooked


Each serving is only 3 Weightwatchers Pro Points and there delicious, i topped mine with 1 tsp of Devon Low Fat Custard and 1 tsp of Weightwatchers Cream this equal 1 Weightwatchers Pro Points and i half a 99 Flake and crumbled it 
untop and it was delicious.

Weightwatchers Puff Pastry

Weightwatchers Puff Pastry 

Well now who doesn't love puff pastry? untop of Steak and Mushroom Pie, Apple Puffs and even, Dare i say this at the end of February but MINCE PIES.  However all of these dishes, although tasty on the lips really are notorious for landing on your hips.  Usually about this time of year we still trying to shift the festive excess. 

So there is was, doing my weekly shop in Tesco, (i should not have gone as i was hungry) and i see this in the Frozen section.  Yes Light Puff Pastry? I worked it out at 7 Pro Points for 75g.  I know! my initial thought was that's way too many for my liking.  However it is called Puff Pastry because it Puffs up.  I got 3 portions from 75g and that works out at oh yes 2 Weightwatchers Pro Points.  Now that is worth it. 

I cant remember the cost just now but it was around 2 Euro 50 Cent mark.  That means that you get 15 portions for your money now that is not bad at all. 

Was it the same as other Puff Pastry? YES.  Was it delicious? Yes.  Will i buy it again? Definitely.

So what can you do with it?

Well i made a Steak and Mushroom Pie for 7 Weightwatchers Pro Points for a very hefty portion size.

I also made Apple Puff for 3 Weightwatchers Pro Points.  Recipes coming soon when i find my camera with the pictures of these deliciousness on it.  

This could be used for Beef Wellington, Salmon Encroute or Sweet Pastries such as Rhubarb Pie.  Its entirely up to you.

Meat Roll Recipe for 8 Weightwatchers Pro Points

Meatball Roll for 8 Weightwatchers Pro Points


So after getting the Weightwatchers Pro Points for Subway it left me longing for one of their Subs with the meatballs with lots of cheese.


I Know! after picking out the lowest Pro Pointed Subs for this blog i then go and have a longing for one of the most fattening ones, Murphy's Law.  I checked out the Weightwatchers Pro Points for this particular Sub and it worked out at 13.  Not Bad but would it fill me as a dinner ? No. So i decided to go and do some digging and combine a few recipes and i came up with this and boy is it tasty.  I mean delicious, filling as a lunch and all for the value of 8 Weightwatchers Pro Points. 


Also Mardi Gras was this week so i thought i would throw in some Cajun spice to celebrate the festival and the results are pretty awesome.  


Cajun Spiced meatballs on a roll loaded with cheese Nipped and Tucked into the value of 8 WeightWatchers ProPoints. Yes Please.  With Cheese Please!! The sauce on its own could be made up and frozen once cooled to be used as a sauce for other dishes such as Shrimp with pasta or chicken and rice.

Weightwatchers Pro Points Per Serving 8 including the roll and cheese


Weightwatchers Pro Points Per Recipe 32


Ingredients


1 Onion Chopped


1 green Bell Pepper chopped 


1 red Bell Pepper chopped 


1 orange Bell Pepper chopped 


1 stick of Celery chopped 


1 Tbl of Nandos Medium Seasoning 


750gm of Chopped Tomatoes 


1 Tbl of Worcester Sauce 


1 Tbl of Hot Pepper Sauce (i used Franks but its up to you)


Half a ltr of Beef Stock


1 Pack of Reduced Fat Beef Mince from Superquinn (this works out at 3 Pro Points for 4 Meatballs)





1 Egg White 


2 Dutch Crispbreads


1 tsp of Parmesan Cheese 


Salt & Pepper


4 par Baked Crispy Rolls, i used Country Kitchen and it worked out at 4 Weightwatchers Pro Points but its bigger than the really small ones, you actually feel like you've had a roll. 



60gm of grated Reduced Fat Cheese i used Aldi 


Spray Oil


Directions


Place the mince into a bowl, add salt & pepper to taste, add 2 tsp of Parmesan cheese, crush the 2 Dutch crispbread and add to the mixture.  Add the egg white and mash the whole lot together.  Place in the fridge while preparing the sauce. 





Place all the veg into a non stick pan and lightly spray some oil, salt and pepper to taste and 1 Tbl of Nandos Seasoning. 






 Saute for roughly 4 minutes on a medium to high heat with a lid until the veg is soft.  Add the tomatoes, heat for 3 minutes and then add the Hot Pepper Sauce, the beef stock and the Worcester Sauce. Cover and simmer on a low heat for 10 minutes. 


Remove from the pan and pour the mixture into a dish or large cup to be liquidized and pulse until there are no lumps left in the mix.


Remove the mince from the fridge and make 15 meatballs from the mixture.  Place onto the pan with some spray oil and salt and pepper to taste on a medium to high heat. Brown the meat completely. 



Once the meat is completely browned add the sauce mix to the meat and cover on a low to medium heat for15 minutes. 


Oven Bake the rolls as per pack instructions, remove from the oven and cut open the roll.  With a Tbl paste both sides of the roll with some sauce and sprinkle half a Tbl of cheese on each of the sauced rolls and return to the oven until the cheese has melted.  Remove from oven. 


Place for meatballs with some sauce on the cheesed rolls and then sprinkle the remainder of the cheese on top of the meatballs and serve.

Weightwatchers Pancake Tuesday Recipes


Pancake Tuesday Weightwatchers Style


 Well I love pancakes but unfortunately pancakes does not love WeightWatchers I mean 7 Propoints for 1 pancake (now if it was 3 yea but 1 ehh no thanks) so after a few searches I found a nice 1.


 It is American so the measurements are different but there filling, there's 6 small pancakes and you will feel like you had a treat rather than a tease.


This is adapted from Chocolate covered kate Katie makes beautiful desserts that are vegan, hence I changed this up. The only work I did was change the calculations, make them oh and eat them. 


Weightwatchers Pro Points Per Serving 5 


 Ingredients


 4 Tbl of flour 


1/2 tsp of Baking Powder


2 tsp of cocoa Powder 


1.5 Tbl of canderel 


 A pinch of salt 


1.5 Tbl of Applesauce ( I bought this in Superquinn and put it into the liquidiser) 


 1/2 tsp of vanilla essence 


 5.5 Tbl of slimline milk 


 Spray oil 


 Directions 


Mix the dry ingredients with the wet ingredients. Stir till completely combined. 
Spray oil on a non stick pan over a medium heat then add 1.5 Tbl of mix to the pan. 


When the pancake is bubbling flip over for roughly 2 minutes, then plate it and repeat the process. 


 I served this with banana and 1 Tbl of Devon low fat Custard and it was delicious.

Ingredients


125 g Flour, Wheat, White, Plain, sifted

1 medium Egg, Whole

1/2 serving(s) (1/4 pint) Milk, Skimmed

1 spray(s) Cooking Spray, Calorie Controlled

Method

  • Put the flour into a bowl and break the egg into the centre.
  • Add the milk gradually beating into a batter.
  • Pour the batter into a jug.
  • Heat a non-stick frying pan.
  • Spray lightly with low-fat cooking spray.
  • Pour in 3 tbsp batter and quickly swirl the pan to coat the base.
  • Cook until the batter becomes firm and bubbles appear.
  • Flip the pancake over.
  • Serve with fresh lemon, artificial sweetener or sugar

Weightwatchers Pasta Recipes

Weightwatchers Pasta Bolognese


I love Pasta Bolognese and i make this roughly once a month, however, when i first started WeightWatchers i had absolutely no cooking skills and it took me a full year to learn how to make this without using a store bought sauce, instant pasta or a frozen meal. 


So after about 8 months of making pure and utter slop i decided to Google a few recipes and see what i could come up with.  Four and a half years on here's an actual recipe. 


I wouldn't mind but its so simple.


Serves 4


Weightwatchers Pro Points Per Serving 9

Ingredients


16 oz of Pasta of choice (450g I think)


450g pack of Turkey Mince


500g Carton of Passata or you can use 1.5 cans of Chopped Tomatoes


5 Mushrooms Chopped


1 Red Bell Pepper chopped


1 Green Bell Pepper chopped


1 Onion Chopped 


4 Cloves of Garlic Chopped


1 Tbl of Spicy Italian Seasoning


1 tsp of Italian Seasoning


Salt and Pepper to taste


1 tsp of Parmesan Cheese per serving


A sprinkling of Oregano


Spray Oil


Method 


Cook pasta according to pack instructions


Lightly spray a non stick pan with some spray oil over a high heat, add the onions and garlic and saute for 3 minutes until they turn golden, but not burning. Reduce heat to medium.  Add the peppers and saute for another 2 minutes.  Add the mince and stir, breaking up large pieces of meat. 


Add salt and pepper of half a Tbl of Spicy Italian seasoning. 


The mince should not be turning a brown/white color. Continue to break up the mince.  


Add the passata and mix well 


Add the chopped mushrooms.   Add the remainder of the seasonings. Adjust salt and pepper to taste. Cook for another 5 minutes. 


Plate up the pasta, add  1 .5 ladle spoonfuls of Bolognese on top.  






Add the Parmesan and garnish with some Oregano.

Well here it is?

 I reached GOAL today

Whaaaaaaaaaaaa!



So this took 5 long years of Blood, Sweat and Tears, and there were lots of all 3 of them.  With having children while doing Weightwatchers, holidays, parties, wedding, you name it.  Well i still managed to maintain a great lifestyle while loosing weight and here today i reached the Goal that i have aimed for.  Im actually really proud of myself.


I often wondering when the other members in the seats around me would reach goal, what made them different than me or anyone else in the room and tonight i realized what it is,


P E R S I S T A N C E


The only thing different is that we stuck with it even when we were up 7LB in a week (music festival) of the weeks we are really good and well the scales says otherwise, stick with it.  It really does work and i also have a fantastic leader as well as great members in the class.


So if your still on your journey, keep with it, good luck, and i hope i can help some of you along the way xxx Skinny CC 

WeightWatchers Fish Recipe

Weightwatchers Pan Fried Salmon and Potatoes for 11 Pro Points


This is so tasty and is quick and easy.  This should take no longer than 20 minutes max to get from fridge to table. 


Spiced Salmon with a hint of dill cooked so that its light and soft with the crispy seasoned Potatoes over a salad is a beautiful treat. 


And its loaded with Omega 3 and helps those Brain cells along (which i really need) along with all of the other benefits that eating fish has. 


Serves 2


Weightwatchers Pro Points Per Serving 11


Weightwatchers Pro Points Per Recipe 22


Ingredients 


2 medium sized Salmon Fillets (No bones but the skin still on)


2 medium sized Potatoes


1tsp of crushed Chili Flakes


Salt and Pepper to taste


2 tsp of Arrowmat Seasoning


1 tsp of Marks & Spencers Roast Potato Seasoning 


A half a tsp of Dill


Salad of Choice 


Cherry Tomatoes 


Juice of a quarter of a Lemon 


Spray Oil


Method 


Take the potatoes, pierce with a knife throughout both potatoes.  Place in the microwave for 8 minutes on high. 


Lightly spray a non stick pan with spray oil on a medium to high heat.  When hot, place the salmon skin side down on the pan.  This should sizzle.  Add salt and pepper (i used freshly ground black pepper), the chili flakes. 






Lower the heat to medium.  


You should start to see the pink coming up through the salmon 


Wait 2 minutes and add the dill. 


When the microwave beeps take out the potatoes (carefully) and dice them up. 


Remove the salmon from the pan. Return heat to high and spray with a little oil. 




Add the diced potatoes and add the remainder of the seasonings. 


Cook on high for 2 minutes and then toss in the pan. 


Add salad of your choice (I used a crispy salad) to the plate, place the potatoes on top of the salad and add the salmon and garnish with cherry tomatoes. 


You could always a little sweat chili sauce if you like but this is delish as it is.

Weightwatchers Food Finds

Happy Valentines Day 


So there i was doing my shopping and i see these and my mouth started to water, yum, i could smell the chocolate.  I decided to calculate them and see how many Weightwatchers ProPoints these yummies actually have?


To my utter astonishment the Weightwatchers ProPoints Value is 1 yes 1 and to go one better if i were to have 2 of these Flake 99 it would be only 2 ProPoints.  That means its 1 for 1 and 2 for 2. 


This has really made my Valentines Day because there so versatile.  Yummy on their own or added to ice cream or Trifle. 




Other Find of Week 


Nutella to me is the Devil! Why? Well once i start i cannot stop eating it. Its so delicious on Bread, Crackers or as a dessert so now it is banned from the house completely because if its in the cupboard it actually starts to wink at me, literally it beckons me. Then i found this in my local Dunnes Stores.  I think it was about 2.50 Euro for the mini tubes.  


So they looked like Nutella, they smelled like Nutella, did they taste like Nutella? well not really but that's because they don't have the Hazelnuts in them but they were a great substitute, so the ProPoints i hear you ask? for a mini tube,which covered 2 Dutch Crispbreads lusciously 2, yes 2 Weightwatchers Pro Points per tube, which means that half is 1 and really to get you past the sugar rush for 1 Dutch Crispbread with half a tube is only 2 ProPoints.

Weightwatchers Eating Out Help


Love is in the air.

Weightwatchers Chocolate Cake for 3 Pro Points



Weightwatchers Valentine's Day Chocolate Cake





Love is in the air and that means so is high pointed, fat laden food.  I love going out for a meal and i really love desserts but with Valentines Day i prefer to have a nice meal at home and relax without all the hustle and bustle that "Love day" brings. 


My favorite part of any meal is Dessert, so i decided that i would try to make an indulgent chocolate cake that doesn't bust my pocket and of course my gut. 




I served this with my Weightwatchers 0 Pro Point Vegetable Soup and baked Salmon with Fried potatoes.  




So this chocolate cake is from www.weightwatchers.ie and i decided to give it a shot.  Yes its scrumptious.  


The pictures don't do this any justice. Real chocolate indulgence with a hint of raspberry and i added some coconut, purely because i love coconut. Its light and fluffy and thoroughly delicious. All this for a Weightwatchers Pro points Value of 3



I used a heart shaped cake mold which i bought in Lidl for 4.99 Euro but you can use any cake mold you choose. 


This recipes makes 10, however the cake mold only makes 8 so i repeated the process for the last 2 and only baked them for 15 minutes.


So if your staying in tomorrow but want to celebrate Valentines Day and impress that someone special in your life here's the recipe. 




Serves 10 


Weightwatchers ProPoints Per Serving 3


Weightwatchers ProPoints Per Recipe 30 




Ingredients 


225g boxed cake mix of Betty Croker Devil's Food Cake Mix (that's half of the box)


80mils of Water


6 Tbl of Low sugar Raspberry Jam


2 Egg Whites


100g of Chocolate


Raspberries for decoration


1 tsp of Dissented Coconut. 


Method 


Pre heat the oven to GM 4 or 180 C


Add the egg whites, water and 2 Tbl of jam to the cake mix


















Mix with an electric mixer until smooth




















Pour into the cake molds, do not over fill the cake molds because this cake rises, about 3/4 full is plenty






Place on the top shelf of the oven for about 23 minutes


You can look into the oven to see if there rising but try not to open the oven as this delays the baking process


Turn out unto a wire rack, (I used the rack from my grill) and allow to cool 


Take a pan of boiling water, lower the heat to simmer of low and in a delph bowl (not a plastic one) break up the chocolate in the bowl and place the bowl untop of the simmering water and allow the chocolate to melt stirring it along the way 




This will take about 6 minutes, remove from the heat, away from the simmering water and allow to cool for about 1 minute


Stir in the 4 remaining Tbl of jam and stir until the jam is mixed thoroughly (if the mixture starts to set place in the microwave for 30 seconds until smooth again. 


Place 1 heart cake onto a plate spoon the jam and chocolate mixture untop, it will set fairly quick and decorate with raspberries and a pinch of coconut.  Remember the entire tsp is sufficient for the ten cakes.
