Meatball Roll for 8 Weightwatchers Pro Points


So after getting the Weightwatchers Pro Points for Subway it left me longing for one of their Subs with the meatballs with lots of cheese.


I Know! after picking out the lowest Pro Pointed Subs for this blog i then go and have a longing for one of the most fattening ones, Murphy's Law.  I checked out the Weightwatchers Pro Points for this particular Sub and it worked out at 13.  Not Bad but would it fill me as a dinner ? No. So i decided to go and do some digging and combine a few recipes and i came up with this and boy is it tasty.  I mean delicious, filling as a lunch and all for the value of 8 Weightwatchers Pro Points. 


Also Mardi Gras was this week so i thought i would throw in some Cajun spice to celebrate the festival and the results are pretty awesome.  


Cajun Spiced meatballs on a roll loaded with cheese Nipped and Tucked into the value of 8 WeightWatchers ProPoints. Yes Please.  With Cheese Please!! The sauce on its own could be made up and frozen once cooled to be used as a sauce for other dishes such as Shrimp with pasta or chicken and rice.

Ingredients


1 Onion Chopped


1 green Bell Pepper chopped 


1 red Bell Pepper chopped 


1 orange Bell Pepper chopped 


1 stick of Celery chopped 


1 Tbl of Nandos Medium Seasoning 


750gm of Chopped Tomatoes 


1 Tbl of Worcester Sauce 


1 Tbl of Hot Pepper Sauce (i used Franks but its up to you)


Half a ltr of Beef Stock


1 Pack of Reduced Fat Beef Mince from Superquinn (this works out at 3 Pro Points for 4 Meatballs)





1 Egg White 


2 Dutch Crispbreads


1 tsp of Parmesan Cheese 


Salt & Pepper


4 par Baked Crispy Rolls, i used Country Kitchen and it worked out at 4 Weightwatchers Pro Points but its bigger than the really small ones, you actually feel like you've had a roll. 



60gm of grated Reduced Fat Cheese i used Aldi 


Spray Oil


Directions


Place the mince into a bowl, add salt & pepper to taste, add 2 tsp of Parmesan cheese, crush the 2 Dutch crispbread and add to the mixture.  Add the egg white and mash the whole lot together.  Place in the fridge while preparing the sauce. 





Place all the veg into a non stick pan and lightly spray some oil, salt and pepper to taste and 1 Tbl of Nandos Seasoning. 






 Saute for roughly 4 minutes on a medium to high heat with a lid until the veg is soft.  Add the tomatoes, heat for 3 minutes and then add the Hot Pepper Sauce, the beef stock and the Worcester Sauce. Cover and simmer on a low heat for 10 minutes. 


Remove from the pan and pour the mixture into a dish or large cup to be liquidized and pulse until there are no lumps left in the mix.


Remove the mince from the fridge and make 15 meatballs from the mixture.  Place onto the pan with some spray oil and salt and pepper to taste on a medium to high heat. Brown the meat completely. 



Once the meat is completely browned add the sauce mix to the meat and cover on a low to medium heat for15 minutes. 


Oven Bake the rolls as per pack instructions, remove from the oven and cut open the roll.  With a Tbl paste both sides of the roll with some sauce and sprinkle half a Tbl of cheese on each of the sauced rolls and return to the oven until the cheese has melted.  Remove from oven. 


Place for meatballs with some sauce on the cheesed rolls and then sprinkle the remainder of the cheese on top of the meatballs and serve.
