Carrot Cake

Happy Mother Day


Carrot Cake with real icing dripping off the edges.  Now that's a Mother's Day treat. 


I was recently asked if I had a recipe for carrot cake, I did have one but it was quite high in Propoints, as in 8 per slice, I felt that it was a bit too much for 1 slice and I have to say that the slices were fairly slim.  So I did have a recipe for chocolate brownies that I should really post here because there lovely but they are not really like brownies at all.  There more like cake which suits me fine.

So I was thinking if I could alter them would it work as carrot cake.  The result was yes.  There fairly sizable slices, so I was quite happy with that.  The icing really makes this.  I love icing, I would eat it on its own but I do get a terrible sugar rush afterwards and then I behave like a naughty child so I'll stick to the icing just on the cake. 

I have been eating quite bad all week.  The kids were sick and I was sick and really, I was eating whatever was quick and easy.  I actually don't like how I feel after eating badly for a few days.  

I think that after this weekend I'm going to try do a week of eating filling and healthy.  I have been craving a lot of sugar lately because my actual meals were not filling me up. 

So I think that I will try to have porridge for breakfast and then 2 proper hot cooked meals per day and my treat being something small with fruit. 

I have stuck to my lent resolution by drinking copious amounts of water per day, clearing out the system and I really do feel better for it.  I have started yoga, which is probably the best decision I have ever made and I be continuing it long after lent is finished, but I feel that I really need to zone myself back in to not just Weight Watchers Prop Point friendly foods but healthy eating. 

I shall keep you all posted with how I am doing on this one,  any way before I start this good healthy food, time for a little treat, well it is for Mother's day!

Weight Watchers Propoints per recipe 57
Serves 12

Ingredients

4 Tbl of baby pureed fruit
1 medium banana mashed 
8 Tbl of sugar
1 tsp vanilla extract
4 Tbl of Ovaltine
1/2 tsp baking powder
1/2 tsp salt
1 carrot finely grated
3 Tbl of crushed walnut pieces
125g of self raising flour

For the icing

4 Tbl of icing sugar
1 tsp of Almond Milk

Directions

Preheat the oven to gas mark 6.  Mist your baking tray or tin with spray oil and rub it in so that the tin is well oiled.

In a large bowl mix the mashed banana, apple sauce and sugar.  Add the vanilla extract and the Ovaltine and stir to thoroughly combine.  Add the salt, baking powder and carrot.  Combine well. 

Sift in the flour and stir and then add the chopped walnuts and mix to combine.  Pour into your baking tin and spread evenly. 

Reduce the heat to gas mark 5 and bake for 45 minutes or until a tooth pick inserted into the middle comes out clean. 

Transfer to a rack to cool completely. 

To make the icing, mix the milk with the icing sugar and stir to combine.  Pour over the carrot cake and spread with a brush. 

Divide into 12 and serve.

Some people who're on a diet are cheating themselves with eating carbohydrates with out even realizing that they'll only acquire one thing and that could be dangerous when taken in greater amount. Weight Watchers, however, seeks to not merely assist folks control just how much food they eat, but what sorts of food they are consuming.

  2. @weightwatchersdessertrecipes I couldn't agree more, I love weightwatchers because it teaches us the importance of all our food groups and being fuller for longer, while focusing on moderation rather than deprivation. Understanding that a treat is a treat and not everyday. It's not a diet, it's a healthy lifestyle change.

  3. It's a good one recipe for the carrot cake.
    I know to make the carrot cake but my recipe is different to that.
    It's a new for me, I will try this recipe next time.
