Potato and Leek Soup


This will be my first actual proper day on Simple Start, whereby I will have variety.  Lets just say that hospital food is not very Simple Start friendly.  Therefore, the last week I have been eating crumpets with crumpets. 

So, today, we are not in hospital and I will not be eating crumpets.  I will be eating this.  I actually got soup in hospital and I think it should have been called cream of nothing soup.  Yes there was cream, but what was in it after that I have no idea what so ever. 

Even with being in the hospital, this is day 4 of me not having any chocolate at all.  This is a first for me because I always had a treat.  

I didn't start this deliberately, it just happened and I'm really proud of the fact that this is day 4 and I am still holding out strong.  Of course, If I really wanted it I would have some, but I just don't feel the need to have any. 

Simple Start has thought me a lot about myself though.  I am a boredom eater.  I got so bored in the hospital at times that I thought I would just eat, but I was on SS and therefore didn't.  I actually took up crochet to occupy my hands and my brain and it worked.  Not that I will have time now that were home, but I really needed distraction. 

I never realized how much I ate, just to distract myself, tired, bored, over hungry, it's there on the table and the biggest one, I'm hungry in my head but not in my tummy!

So breakfast this morning was shredded wheat and skimmed milk, lunch will be Potato and Leek soup with a WeightWatchers petite pain and dinner will be potatoes, cabbage, boiled ham, turnips and carrots. 

Here's the soup recipe.

WeightWatchers Simple Start Soup
WeightWatchers Filling & Healthy Soup
WeightWatchers Propoints per serving 2
Serves 6

Ingredients

2 large onions diced
2 sticks of celery, chopped
6 stalks of leek, washed and chopped
3 medium potatoes, washed and peeled
Salt & Pepper
2 veg stock cubes made up with a ltr of boiling water
Spray oil 

Directions

In a large saute pan, mist with a little spray oil over a low heat. Add the chopped onions, celery, leek and potatoes, season with salt and pepper and then cover with the lid and allow to soften, so, about 20 minutes. 

In the mean time, make up the stock and allow it to completely dissolve.

Once the veg is softened, pour in stock, bring to a boil and then reduce the heat to a low medium heat.  Simmer for about 20 minutes.  

Blend to your desired consitency.  Check for seasonings and enjoy.  A simple recipe for the Simple Start.
