White Spicy Chili

It's getting hot in here, so take off all your ... OK it's not that hot!

Ok some news to start off with.  Firstly, The Hairy Dieters have another book and its due out the 15th of August and I'm really looking forward to it because I just loved their last one.  You can pre order it at www.amazon.co.uk but you know, you would probably get it quicker by just popping into your local book shop on the day. 

Another bit of exciting news.  Not only am I the new WeightWatchers leader to Rathmines every Thursday at 6 pm in St. Louis High School (cough, promote, cough) but now I am also the WeightWatchers leader for Goatstown.  It's on every Tuesday in Our Lady's Grove Primary school at 7 pm. 

I was there this Tuesday and they were all so lovely and I have to tell you I was very nervous.  I thought that once I got into the swing of it I would be fine.  Which most of the time I am, and then right in the middle of something important, blank.  As in blankety blank.  Absolutely nothing.  It's not that I don't know the information, it's that, right in the middle of it, I will look at people in the class and then my heart starts to sprint because I think, does this make sense? I hope it does and the feed back was really good. 

So if any of you live out that way and are looking to start back classes, lets start together, what ya think? 

Anyways, enough chit chat.  I was looking at recipes online and there were lots of ideas for a white chili and the usual problem for WeightWatchers came up.  White Sauce!  So after a little think, I came up with something that I was so glad I thought of.  Not forgetting what I had in the cupboard, I used a tin of WeightWatchers Chicken soup and added 2 Tbl of WeightWatchers Thick Cream. 

It was so delicious, I will definitely be making these again.  Remember though to adjust the heat from the Jalapeno's to suit your taste because I was very heavy handed with them and nearly cried.  I have since amended this.

Serves 5

Ingredients

5 WeightWatchers Wraps 
350g (1 pack) Dunnes Stores or Superquinn 5% Fat minced beef
2 Tomatoes chopped very finely with the wet part removed
1 onion chopped finely 
2 gloves of garlic minced or 1 Tbl of jarred garlic
Half a green pepper chopped very finely 
2 Tbl of chopped Jalepeno's from a jar 
1 Tbl of Mexican seasonings 
1 Tbl Coriander 
1 tsp of cumin
1 tsp chili flakes 
1 tin of WeightWatchers chicken soup
1 Tbl WeightWatchers Thick Cream 
3 Tbl of Lidl Linessa grated cheese 
Spray Oil 
Salt & Pepper 

Top with chopped spring onions and serve with a mixed salad 

Directions 

In a large saute pan, mist with a little spray oil over a medium heat until its hot.  Add the onions and saute for 2 minutes.  Add the garlic and cook until aromatic.  Add the mince and brown the meat off.  Once the meat is cooked, add the seasonings, chopped pepper and tomatoes and stir. 

In a separate pot, pour the chicken soup and warm it as you would normally for soup, then at the end, mix in the cream and over a really low heat, stir until well combined.   Add some Mexican spice to the chicken soup, literally, just a sprinkling.  

Add salt and pepper to the mince mix.

Mist a large oven dish with spray oil and set the heat to gas mark 5 in the oven. Pour 2 3rds of the chicken soup over the mince.  You don't want it sloppy so just until its thick. Allow it to sit together for about 5 minutes.  
Divide the mince mixture between the wraps and roll them.  Place seam side down on the over dish.  Pour over the remainder of the chicken soup and then top with the cheese. 

Place in the oven and bake for around 20 minutes. 

Remove from the oven and allow it to sit for about 10 minutes.  Then serve with a really colourful salad.

  1. Great post and great idea with the white sauce will definitely be trying this one at the weekend. You must be a great leader considering the success you have achieved so as you progress I am sure you will lose the blankety blank feeling. I have that all the time and I am not standing in front of a class full of people devouring your every word hoping you can inspire them to succeed as you have. I really wish I lived in Dublin so I could attend your classes. Good luck xxx
