0 Propoint Tomato and Basil Soup



There is nothing like a bowl of tasty, warm soup to heat you up during the winter or the summer If you live in Ireland. Especially one that has 0 Weightwatchers Propoints value.

Soups either already are your best friend or soon will be If your just starting your weight loss journey on Weight Watchers.

They are so handy for lunches, not only will they heat you while the weather is chilly but If you make any of the 0 Propoint soups, they will help fill you up.  

If your heading out for a late dinner or supper and you need something in the mean time, soup is your go-to food.  An added bonus, nearly all of the soups that I post are loaded with vegetables, there usually a good dose of vitamins. 

This Tomato soup is really tasty and will also help keep those colds at bay. This recipe has very few ingredients but it doesn't need much else.  

Tomato, garlic and onions are excellent natural immune booster and all of them together not only taste great but really are good for you.

Serves 8 

Ingredients

1 large onion chopped
1 celery stalk chopped
2-3 cloves of garlic minced (depending on taste)
Spray oil
2 tins of chopped tomato
1 ltr vegetable stock made on boiling water
1 tsp ground basil
1 tsp ground oregano
Salt & pepper

Directions

Make up your vegetable stock and set aside.

Mist a large pot or pan with spray oil over a low to medium heat.  Add the onion and celery and saute for about 3 minutes.  Add the minced garlic and cover with a lid over a really low heat for about 7 minutes.  Once the onion and celery is soft pour in the tins of tomatoes and the herbs, salt and pepper to taste and cover again with the lid for about 5 minutes.

Pour in the vegetable stock and bring to a boil.  Reduce the heat to a simmer for about 15 minutes   Turn off the gas and allow the soup to cool before blending to your desired texture.

Serve in warm soup bowls. 



These also freeze well, so you can portion it out and place in the freezer and use them as you need to.
