Raspberry and Chocolate Madeira Laof

Quick, simple and utterly indulgent


Tangy and chocolate y soft and light maderia cake.  This literally melts in your mouth.  This is great if your having visitors, not only because it tastes great but it looks great.  If your looking for a weekend treat or some easy baking with the kids.  This is definitely the go to recipe. 



A few weeks back, i posted a recipe for Madeira cake .  This was one of the easiest cakes ever.  So i decided to use the same principle just adding a twist.  



Now your probably thinking, "why do i choose to make easy cakes" honest answer, i don't have the time really and sometimes it can be quite expensive and the boxed cakes or just easier for me to make.

Serves 16

Ingredients

1 pack of Odlums Original Cake Mix
100 mls of 7 UP Free
1 and a half mashed banana
1 punnet of raspberries washed
1 small pack of Dr. Oetker milk choc chips
Spray Oil





Directions 

Preheat the oven to gas mark 4.

In a large bowl, mix together the cake mix, banana and 7 up until you have a thick, smooth batter.  Add the raspberries and the choc chips and stir to combine.

Using a loaf tin, line with baking parchment.  Mist the parchment with spray oil, ensuring you get the corners and any edges. 

Pour in the batter and place in the oven.  Bake for about 40 minutes or until a tooth pick inserted into the middle comes out clear.

Allow to cool on a rack completely.  Slice into 16 and serve.
