0 Weightwatchers Propoint Vegetable Soup

Its Free, warm, delicious and keeps hunger at bay


Nothing beats a warm bowl of thick, tasty hearty soup to keep hunger at bay during the winter, especially when it has a Weightwatchers value of 0.  Great for lunch or starters. 



This is my favorite time of year, however, I also grow a tail around this time of year.  Im always hungry and I find that it is generally now where I start to loose control because in general, I'm wearing layers of clothes.

It took me a while to start on the soups because i really couldn't see how they could fill you up if there was no cream or oil.  Not that I have ever been stuffed for the day on a cream cake.  

Once I did, I loved it and this has been my savior and really helped me shift the pounds , all 127 pounds of it to be exact. 

Now all of the veg ingredients besides the butternut squash and sweat corn, i bought in a pack that has all of the ingredients whole, in Aldi for E1.25, the butternut squash was E1.25, the corn was E0.65 and the stock was E0.40.  That means that this whole pot of soup cost E3.55 which is really good value.

Serves 6

Ingredients

3 large carrots
1 large onion
1 small turnip
1 stick of celery
Half a butternut squash
Some parsley
Half small tin of sweat corn
1 veg stock cube made up with 1 litre of boiling water
Spray oil
Salt & Pepper

All veg to be chopped up.

Directions

In a large non stick pot or pan, mist a little spray oil and add in all of the veg except the corn.  Season with salt and pepper and over a really low heat, cover and allow to sweat.  About 15 to 20 minutes.  Be sure to have the heat on really low because you definitely don't want burn tasting soup. 

In the mean time, mix the boiling water and the stock cube and allow for it to sit while sweating the vegetables.  Once the veg is soft, pour in the stock.  Cover and turn the heat up to a boil and allow it to boil for about 4 minutes.

Then reduce heat.  Add in the sweat corn and allow for it to simmer for 20 minutes.  Allow to cool slightly and then blend to a consistency that you like. 

Serve as is or you can freeze individual portions for lunchtimes.

  4. Hello Victoria, yes sweet corn has propoints as does the stock cube. Using the stated portion of sweet corn is 2 propoints. I used an also stock cube were you actually get 2 cubes for 1 propoint. The whole pot works out at 3 propoints but serves 6 and the propoints are rounded to the nearest number so each portion is 0 but if you had 2 portions it would be 1 propoints. I hope this helps :-)
