Weightwatchers Style Baked Potato

Wondering what to have for Lunch?


Firstly i need to apologise for the terrible picture but having children crawling in between your legs does not help with focus.

So this is not news.  A baked potato, we've all done that yea!  Well i have but what i didn't realise until recently was that the Denny Gammon Steaks are only 2 Weightwatchers Propoints and go lovely with a baked potato and cheese.





I bought these in Superquinn with the intention that they would be handy to have on hand for the kids because my eldest loves ham and especially proper boiled ham so i thought this might be a good substitute.  

These are actually quite large and thick and well worth 2 Propoints.  These are great as pizza toppings, baked potato toppings or fryed up with a pineapple on top. 

If your looking for something nice for the lunch these are a winner.

Serves 2 

Ingredients

1 medium potato
1 Tbl of Flora ProActive
1 tsp of Weightwatchers Salad Cream
1 Denny Gammon Steak
30g of Low Fat Grated Cheese
1 scallion chopped
Salt & Pepper to taste
Spray Oil

Directions

Pierce the potato with a knife and place in the microwave for 5 minutes.  In the meantime, place gammon steak into a frying pan and mist with spray oil.  Cook as per pack instructions. Set aside.

Remove potato from the microwave and half.  Scoop out the potato from one half and use half the flora and half the salad cream and mash into the potato.  Chop up the gammon steak into little pieces.  Add half the gammon steak and the scallion and place the mash back into the potato skin.  It wont be level.  Repeat the process on the other half of the potato.  Top each half with a measured Tbl of grated cheese. 

Serve with a side salad.
