Moist and fruity Halloween Brack
Halloween is my favorite time of year. I just love the feel of it. So at the moment im in full Halloween mode, getting costumes ready and planning dinners and what not. I said yesterday on Facebook that i was going to put this up this week but decided why wait. All it took was literally soaking some fruit overnight and then a bit of mixing today and that's it.
This recipe is from my brilliant Weightwatchers leader that she gave us last year but it went down so well I thought, why change it when it was so tasty just as it is.

Serves 16 Slices
Ingredients
340g of sultanas
1 mug of strong black tea
2 tsp of mixed spice
220g of self-raising flour
Grated Rind of lemon and orange
1tsp of Captain Morgans
1 egg
Spray Oil
Directions
Soak fruit, grated rind, spices
and rum in the hot strong tea, cover and leave over night.
Preheat the oven to gas mark 5
Add the remaining ingredients
and mix together. Line a 2 lb tin with baking
paper and mist with spray oil making sure that you get the edges well. Pour in the mixture, bake in oven gas mark 5, 180c for around 50 min or until you can stick a knife in and it comes out clean.
Allow it to cool on wire rack and cut into 16 slices.
Enjoy the Niptuck way, so you don't have to!
