Weightwatchers French Toast, Rashers and Maple Syrup with mushrooms and tomatoes for 8 Weightwatchers Pro Points
Well my camera seems to be taking a holiday or sick leave because i can't find the photo's for the French Toast but it was just so delicious that i thought i would share the recipe anyway because its the perfect breakfast for Sunday mornings or even better Sunday brunch for those that get lie ins (i wish i was one of them)
A portion of this works out at 2 slices of French Toast, 2 rashers/bacon and maple syrup but i added fried mushrooms and tomatoes to this and it was really filling.
If your having a Healthy and Filling Day this will only work out at 1 Weightwatchers Pro Points per serving which is really worth it, but if you are going to make it, do it for lunch as its quite a substantial meal and maybe a bit too heavy for breakfast (as if)
French Toast

Serves: 2Preparation Time: 30 minutes
Ingredients
- 2 medium Egg
- 1 tablespoon Maple syrup (100% maple)
- 1 tablespoon Milk, cow's, fluid, 1% fat
- 1/4 teaspoon Flour, white
- 4 strips Pork bacon, formed, lean meat added, cooked
- 1/4 teaspoon Salt
- 4 slices Weightwatchers bread
- Spray oil
- In a non stick pan add the bacon and fry until crisp
- Remove from pan and set aside
- In a deep bowl mix the eggs, flour, salt and milk together with a whisk
- Lightly spray the non stick pan with spray oil
- Dip a slice of bread one at a time on each side into the mix and immediately place onto the hot pan
- Allow the bread to crisp on one side and then flip over
- Repeat until all the bread is fried on both sides
- Serves 2 Slices of French toast with 2 rashers on each plate
- Pour 1 tsp of Maple Syrup over each portion
