Summer Couscous


Spiced couscous with spring onions, peppers and shredded smokey bacon ham, its a 5 minute lunch or side dish and can be eaten hot or cold. 


The sun is shining in Ireland this week, so do not spend this Bank Holiday weekend in the kitchen, get out there and enjoy it. 

We do still got to eat though, other wise the fridge pickers come out, and what do fridge pickers wear?  That's right, bigger knickers, and we don't want that. 

This will help with both fridge pickers and the bigger knickers issue and that's exactly what we want over a bank holiday. 

This can be something you make in the morning and allow it to go cold and its delicious.  It's so simple that it even works great and your camping over the weekend, because you don't need a lot of utensils, just boiling water, a Tablespoon, teaspoon and a knife.

Serves 1 

Ingredients 

60g of couscous
80ml of boiling water
Half a vegetable stock cube
1 Tbl of Flora ProActive
1/2 a Tbl of garlic granules
1 tsp of lemon juice
Salt & pepper 
A quarter of a red pepper chopped very finely
3 Spring onions or scallions as I know them as
40g of Brady's Family torn ham, smokey bacon flavour



Directions  

Mix the stock cube with the boiling water.  When dissolved, pour the water over the couscous.  Add the Tbl of Flora, the salt, pepper and garlic granules and pour the lemon juice.  Stir with a spoon and cover with a lid for 5 minutes. 

When ready, fluff the couscous with a fork.  Add the chopped peppers and spring onion and the torn ham. 

Serve for lunch or great for BBQ food as a side dish and very filling.
