Cheese Toastie

Carmelised onions with tomatoes, a hint of basil smothered in melted cheddar cheese on a toasted bread.  Now that's a lunch date. 



A little something to liven up your lunch.  A little twist on the average cheese toastie.  Have this with a bowl of 0 pro point soup and a salad and you have yourself a delicious lunch.

Serves 1 

Ingredients

2 slices of calorie controlled bread
1 red onion sliced thinly
Half a tomato, chopped
1 Tbl of veg stock
Dash of Worchester sauce
1/2 tsp of flour
Sprinkling of basil
40g of grated reduced fat cheddar cheese
Salt & pepper to taste
Spray Oil

Directions

Toast the bread and allow the toast to cool.

Mist a large saute pan over a medium heat.  When hot add the sliced onions to the pan, stirring occasionally, cook for about 10 minutes, until there browning slightly and soft.  There should be very little moisture left in the pan at this stage. 

Add the chopped tomato in and stir, sprinkle in some basil, and cook for about 3 minutes until it starts to dry out again.  Pour in the veg stock and a dash of worchester sauce.  Sieve the flour over lot and stir until it becomes thick.  Season with salt and pepper. 

Mix in the grated cheese and stir until the cheese is melting and it's become slightly gloupy. 

Divide the mixture between 2 slices of toast.  Place the toast onto the grill until the cheese starts to char. 

Serve with warm soup and salad for a complete lunch.
