Weight Watchers Stlye Mexican Bowl

Minced beef spiced with chili beans and Jalapeno's, topped with sharp cheddar cheese, shredded lettuce, avocado, peppers and a dollop of cream, all inside a crusty wrap. 
Mexican food is just so colorful and I really love it but to eat out in a Mexican restaurant can cost you a lot more than what's in your pocket.  Don't get me wrong, if it's your treat night fire ahead, but if you want Mexican at home, here is my Niptuck version. 

This can be spiced up or cooled down to suit your taste, so play around with this so that you get your Mexican bowl just right. 

This was also very quick to make.  It took me about 25 minutes in total to make this because I was in a rush all day and I decided to rustle up what I could.

Serves 4 

Ingredients

4 Weight Watchers Wraps or Aldi Wraps

1 pack of 95% Fat Free mince beef
1 tin of chili beans
4 slices of jalepeno from a jar of sliced jalepeno's sliced very thinly
Half a small tin of sweet corn
1 onion chopped finely
Juice of half a lime
Spray Oil

Half a pepper sliced finely
1/4 advocado sliced thinly 
4 measured Tbl of low fat grated cheese
4 Tbl Weight Watchers Fresh Cream
4 scallions sliced thinly 

Directions

To make the bowl, place a wrap over a bowl and push it into the shape of the bowl.  Place something into the middle like a cup or something that is oven proof.  Place into the oven for 7 -8 minutes on GM 5. 

In a large saute pan,over a medium heat, mist with spray oil.  When hot add the onions and cook for roughly 3 minutes, until the onion starts to soften.  Add the mince and make sure to break the mince up as your cooking it.  Cook for about 15 minutes until completely browned.

Add in the chili beans and the sliced jalapeno's, allow this to simmer over a low heat for about 5 minutes.  Add in the half tin of sweet corn and just warm for 1 minute. 

Using your wrap as the bowl, divide the chili mix between the 4 bowls, top each with 1 Tbl of cheese, so that the cheese can melt.  Top with 1/4 of the peppers and avocado. Squeeze a small amount of lime. Pour 1 Tbl of fresh cream over the lot and sprinkle the chopped scallions on top.
