Weight Watchers Lunch Recipes

Need something warm for lunch during this cold spell?




Crispy fried bread with melted mozzarella, parma ham with a dash of oregano.  For lunch?  yes please!



I love soups for lunch time, they warm me up and fill me up.  However, I do need something to go along with with it.  The other day I had planned to have some 0 Propoint Tomato and Basil Soup but I really wanted something to go with with it but I was bored of the usual sandwich.  This nearly always involves cheese. 

Cheese could be a real down fall for me if I was to allow it.  I just love it.  Im on the hunt for Irish low fat cheese, I mean not just the usual cheddar but I want blue cheese, flavored cheeses with cranberries or Mexican cheese.  If any of you out there know a place that does this please let me know as soon as you can.

Anyway I really wanted melted cheese on warm bread, so I thought, why not.  This really went down so well.  Not only was I full afterwards but I felt like I had eaten a treat when in fact I was well within my lunch time propoints.

Plus, lunches can get pretty boring, and this really shook it up.

While in class last week, I learned something wonderful.  I love bread, but I choose not to go for it so much because, I'm a bit of a carb fiend and I like to vary my carbs and also I don't feel like I get value for my propoints, then, my lovely leader came up with this.



Hovis Nimble Bread.  I knew that this bread was low in Propoints, but I didn't know that it was better value.  

Its not to thin, but the best part, 1 slice is 1 Propoint   2 slices is 2 propoints.  3 slices is 3 propoints.  Each slice is only 1 Propoint   This is my new friend.   Another bonus its E1.49 in Lidl.  I just love it.  So this is what I used in my fried sandwich.

Serves 2

Ingredients

4 slices of Hovis Nimble Bread
2 tsp of Flora Proactive
60g of Light Mozzerella (I used the Aldi one)
2 slices of parma ham
A handful of Rocket
Half a tomato sliced thinly
1/8 tsp of oregano
Spray Oil

Directions

Spread a thin layer of Flora on the bread on both sides.  Heat a non stick pan over a medium to high heat.  When hot place to slices of bread onto the pan.  It should sizzle when it goes on.  Cook for about 2 -3 minutes until the bread is golden.

Remove the bread from the pan and mist the pan with a little spray oil and place the bread back into the pan on the side that is uncooked.  With the cooked side facing up, place half the cheese onto 1 slice of bread.  Lower the heat down slightly to a medium to high heat.  Sprinkle half of the Oregano over the cheese.

When the cheese starts to melt a little, place half of the tomato on top of the cheese.  Add 1 slice of parma ham with the fat removed onto the cheese and a little rocket.

Place the other slice of bread on top of sandwich, cook for 1 minute and then flip.



Serve with some warm soup Tomato and Basil soup for 0 Propoints. 

Enjoy the Niptuck way, so you don't have to!

  2. I just bought this bread for the first time today so defo making this for my lunch on Sat :)

    I love your blog Claire, fair play to you! I'm only back in ww a few weeks and have half a pound to go to my first silver 7. Going to class tomorrow so fingers crossed!! I need to lose pretty much the same amount of weight that you did so seeing that it can be done is a real inspiration :)

  4. @jen, I'm do glad you my blog and find it helpful. Loosing the weight is doable, remember its a marathon not a sprint and I'm always here to help if I can, you could alway join me in climbing up carountoohil, it's going to be difficult but we would all be in it together? If I could be of any help just let me know.

Ah I'm only back exercising a few weeks now so I think Carountoohil may have to wait a little while! ha I have to walk uphill to the luas stop for work in the mornings and it's getting much easier for me so I suppose that's a good sign. Thanks very much for your offer though! Oh I got my silver 7 this week, delighted :)

  5. @jessica, rocket I believe in the US is called arugula and flora is like a low fat margarine spread, there usually cholesterol reducing spreads.
