Weightwatchers Meatloaf

Craving Comfort Food? 


Minced beef, spice burger, grated carrot, herbs and spices.  A moist flavorsome meatloaf that's easy to make.  Perfect for a quick weeknight meal. 



I have always liked the look of meatloaf, yet when ive eaten it, ive always been left longing.  Although its packed with meat i never really felt that it hit the spot.  Now yesterday, i was craving it, especially with it being such a miserable day out.  However, today it will be great left overs.

I was still not convinced, then it struck me what i could use to make this exactly what i was looking for.  Spice Burgers!  I know, you can taste it now, mince and spice burgers rolled into one.  Now that's a meat loaf.






I was propointing these at 5 when somebody over Facebook informed me that these are actually 4 propoints .  I really love a spice burger.



I thought this was gorgeous, then my mother tasted it and actually had it for her dinner and let me tell you, she does not eat skinny food (that she know's of anyway) well she doesn't need to either.

Each portion is actually a quarter of a bread loaf tin so its quite substantial.  Serve with some mash potatoes, veg of choice and gravy and you will smile from the inside out. 

You could also serve with some butternut squash chips and if you are here is an early Christmas present.  The Actifry machines that i love are actually on sale in Argos at the moment for e123.00 which is e80 cheaper than normal so if your looking for a Christmas present maybe suggest this.

Serves 4

Ingredients

3 Walsh Spice Burgers
350g of 95% Fat Free Mince (i bought this in Dunnes Stores)
1 Carrot grated very finely
1 Onion chopped very finely
1 egg white 
Salt and Pepper
Arrowmat Seasoning
Spray Oil

Directions 

Preheat the oven to gas mark 5 

In a very large bowl, add the mince and scrunch it up.  Add salt, pepper and seasoning to taste and mash it all up.  Mash each spice burger in your hands into the mince.  Add the grated carrot and the diced onion.   Pour in the egg white and combine altogether. 




Mist a bread loaf with spray oil ensuring that you get the corners.

Place the mix into the bread loaf and using your hands pat it down.  Place in the oven for 1 hour.  Allow to sit for 10 minutes when you remove from the oven.  Using a knife cut along the edges and then turn out. 

Cut the meatloaf into 4 and serve.

    1. Yep, you sure can use Quorn and I think it's actually lower in propoints do readjust as needs be
