Weightwatchers Creamy Chicken Salad

Lunch is one of those meals that really, after a while on Weightwatchers, we begin to eat the same thing all the time because we know exactly how many propoints is in the meal.  Salads.  In my opinion can be so dull and boring and quite honestly not near fill a gap in my tooth let alone my stomach. 


I was recently away on holidays and i decided to have a salad for lunch.  This one sounded nice enough and i thought id give it a go.  It was absolutely delicious.  The chicken was creamy and kinda spicy.  Not your usual just plain boiled or grilled chicken, i liked it so much that i decided to try it at home and i really loved it.

This will definitely shake up a boring salad.  I had mine with zero Propoint tomato soup and Melba toast with  cheese.  Really filling and delicious

Serves 4

Ingredients

For the chicken

2 Chicken Fillets cooked and shredded 
2 Tbl of Weightwatchers Salad Cream
2 Tbl of Weightwatchers Mayonaisse 
1 tsp of tomato ketchup
1 tsp of French's American Mustard
1/4 tsp of lemon Juice
2 Tbl of cold water
Salt and pepper 

For the Salad

Shredded Iceberg lettuce 
Half a cucumber thinly sliced 
2 Tomatoes thinly sliced 
2 carrots grated
Half a red onion thinly sliced
16 black olives
1 Tbl of Olive Oil

Directions 

For the chicken, mix all of the sauces together and the lemon juice and allow to marinate for 2 hours.  Then add a little cold water at a time to loosen it out.  Stir in the chicken and season to taste and allow to sit for about an hour. 

For the salad.   Place a handful of shredded lettuce at the bottom of 4 bowls.  Place the sliced cucumber and tomato around the edges.  On top of the lettuce add a Tbl of shredded carrots and then place a quarter of the chicken mix unto each bowl. Sprinkle the red onion and add the olives.  Drizzle the Tbl of Olive oil over the 4 bowls.

Serve with Melba toast and cheese to enjoy.
