WeightWatchers Friendly Moussaka for 6 ProPoints

Weightwatchers Moussaka 


This is really tasty though maybe not so authentic but delicious all the same and great for leftovers and can be frozen once cooled down completely.


I divided this by 6 which gave it a Weightwatchers Pro Points value of 6, however you can divide this by 4 for a more generous portion for 10 Pro Points and add a salad or some green beans.  


It is a little labor intensive, but so worth it.

Ingredients 


4 Rooster Potatoes peeled and thinly sliced


500gr of Turkey Mince


1 Bell Pepper chopped thinly


5 Cloves of Garlic minced


1 Onion chopped thinly


1 Aubergine thinly sliced 


1 Beef Stock 


1 Oxo Cube 


2 Tbl of Greek Spices (I bought mine in Lidl)


Arrowmat Seasoning 


1 tsp Paprika 


A half jar of WeightWatchers White Sauce (I bought this in Dealz but i know its also available in Iceland)


Spray Oil


60gr of grated low fat cheese


Salt and pepper to taste


Method


Place the sliced potatoes in a saucepan season with salt and pepper, add a half a tsp of Greek spices and a few squirts of Spray Oil. Fry on both sides until there crisping.  Remove from pan. 


Take half the fried slices and line the bottom of a deep dish with the potatoes. 






In the same pan on a medium heat add the garlic and some spray oil and fry till its turning golden, add the onions, chopped pepper and salt and pepper.  Saute for about 4 minutes.  Add the Mince. 


Crumble the Oxo cube over the meat.  Add the paprika, Arrowmat seasoning and the Greek spices and the Aubergine. 


Break up big chunks of mince with a wooden spoon.  Mix the beef stock with a quarter Ltr of Water and pour unto the mixture.  cook for about 15 minutes. 


Pre heat the oven to gm 5. 


Drain off the excess liquids from the meat and then pour over the potatoes. 






 Place the remainder of the potatoes on top of the meat. 






Pour the 1/2 jar of white sauce over the potatoes.  Top with the grated cheese. 




 Place in the oven for around 40 minutes until a knife can easily cut through the potatoes.
