Packed full of veg, full of flavor and can be frozen and with a Weightwatchers Pro Points value of 0 makes this is my kind of lunch recipe, especially considering that today was weigh in and i stayed the same.
So in this frosty weather a nice bowl of warm winter goodness is exactly what the doctor ordered.

Ingredients
1 Onion finely chopped
2 Carrots chopped into large chunks
1 small Turnip chopped into large chunks
2 sticks of Celery chopped into medium chinks
A half of a Parsnip chopped into large chunks
1 Tbl of Parsley
1 Tbl of Thyme
1 Tbl of Arrowmat Seasoning
Some Black Pepper and Salt to taste
Spray Oil
1.3 Ltr of Boiling Water (I like my soup fairly thick so adjust to your liking, add more water if you wish)
1 Vegetable Stock
Directions
Place all of the chopped Veg into a large saucepan, add the herbs, seasoning, salt and pepper.
Spray 5-6 spray oil and cover on a low to medium heat to sweat the vegetables for around 10-15 mins.
When the veg is becoming soft and the juices are at the bottom of the saucepan add the boiling water with the stock combined.
Bring to the boil and then reduce the heat to low with the lid on for about 40 minutes.
Wait for the soup to cool a little and then blend with a hand blender to the consistency of your choice.
I served mine with Dutch Crackers with ham, Leerdamer Light cheese, a small salad and some Sweat Chili Sauce. All of this for a Weightwatchers Pro Point Value of 5
