Fruity flan with a thick, creamy custard filling!

This was exactly what the doctor ordered, or maybe they just mean the fruit but seriously if you can decorate "fruit" to taste like this well then im on that "diet".

So the weekend was filled with work, communions, parties and everything else inbetween and cooking was put on the back boiler for a few days but today i was so tired that i really needed something really easy and tasty to boost me.  This did the trick no end.

I got this recipe from one of those baking magazines where you get a free silicone baking tray with it and it cost way too much for so few recipes so it definitely needed the free gift with it, however, surprisingly it was very well written and very simple for so tasty a dish.

Im really so happy with the filling that im definitely going to do it again, plus its so versatile that you add various flavours to it but i was really impressed with this vanilla version.

Now the flan was a back up plan as my lovely little cases got emm, burned to a sinders because i forgot about them but i couldn't wait to try to filling with something when i remembered that i had bought mini flan in Tesco and they have a Weightwatchers Propoint Value of 2 per flan so i decided that they were good enough for me.  I really must try making my own flan someday but that's another day's work.


So here's the recipe,

Ingredients

6 Tesco Mini Flan Cases

For the Filling

1 egg
1 Tbl of sugar
1 Tbl of Sugar substitute such as Canderell
1 Tbl of Cornflour
1 Tbl of Plain Flour
250 Mils of Slimline Milk
1 Vanilla Pod
1 tsp of Vanilla Extract
A dash of lemon

For the Topping

3 Plums finely sliced
100 mils 7up Free or other diet drink
1 Tbl of Jam (preferablly Plum but others are fine)
A dash of lemon

Directions

Placed sliced Plums (or chosen fruit) into a small bowl and pour the Diet drink untop and allow for the plum to gain some of its sweetness.

Place the egg and sugar in a bowl until pale and thick.  Sift in the flour and the cornflour and whisk until thick.


Pour milk, vanilla extract, lemon and vanilla pod into a saucepan and bring to the boil.  Remove from heat and pour into the flour and egg mixture and whisk until thick.  Place the combined mixture back unto a low heat and beat continuously for roughly 1 minutes so that there is no lumps. 

Pour back into the bowl and cover with damp greaseproof paper and chill in the fridge until ready to serve, at least 1 hour.




Place the flan on a plate, take 2 heaped tsp, you may even get 3, of custard like filling and smooth out over the flan. 

Drain the plum slices and decorate the each flan with the plums.



Take the Jam and lemon and heat either in the microwave for 1 minute or over a low heat.  Do not allow to boil.  Sieve the jam to remove any lumps and then brush the jam over the plum slices an serve.
