Strawberries and Chocolate Sauce



Im so lazy with the Olympics on tv.  I know it should give me motivation but i find myself glued to the tv watching the diving and kayaking and swimming.  In all of these games there is a lot of incredibly fit young men and it has not helped move me from the sofa at all.

Also Mondays in my house are a backwards day whereby we dont function as we usually do.  At 3 o clock today, i got the slump and really needed a pic me up and i had strawberries, as per usual i have to have something more naughty than nice on top and i found little tubes of Choccy Philly.

Perfect i thought.  I have found more uses for this choccy philly than i thought possible and i plan on using it a lot more.

So if your looking for something really quick and tasty with a touch of healthy, try this Olympian.

Ingredients

A punnet of Strawberries, i like mine dark red as i always find that's when there at their sweatest
1 Mini tube of Choccy Philly

Directions

Wash, and clean strawberries and remove the green.  Place the mini tube, cover off, into the microwave for 15 seconds.

Dip each strawberry into the chocolate until its all used up.  Place strawberries into the fridge for 10 minutes until entirely cooled.

Serve and enjoy.

Weightwatchers Style Chocolate Vanilla Milkshake

Cold, chocolaty, creamy with a hint of vanilla 






Its warm here the past weekend.  Not exactly sunny but warm and humid.  Although the sun is very brief in its appearance, it is a welcome appearance. 


I must add at this point, anyone reading this who lives in a country that's warm and actually has 4 differentiating season will think that 21 degrees does not constitute heat.  Please bear in mind that i am Irish and not used to this at all.  So when there is sun, even after spending months complaining about no sun, when we get it, we can not bear the humidity.  


This reminded my of my pre Weightwatchers days, when i loved nothing better than going to Eddie Rockets (or as we like to call here in Ireland Empty Pockets) and getting one of their chocolate Malt Milkshakes. 


Unfortunately, this is not close to one of those, but it is really nice and hits the spot.  Its thick, chocolaty and has a rich texture and taste. 


If your looking to cool off or have a treat give this one a shot.

Ingredients 


235 ml Slimline Milk 
3 measured scoops of Weightwatchers Vanilla Ice cream
1 pack of Cadbury Highlights drinking chocolate
1 Tbl of raw Betty Croker Devil Food Cake Mix 


Directions 


Place all of the ingredients into a food blender and mix until well combined and smooth.  Divide the mixture between 2 glass and serve.

Chicken Kebabs



This means summer to me.  Anything BBQ-ee or anything with meat and pineapples.  Im not sure if this is an Irish thing or whether its just my family and friends, but when we talk about BBQ we mean pre oven cooked foods place on the BBQ for literally 10 minutes just to get that charcoal smell from the food.


We have the greatest fear of food poisoning when it comes to BBQ and strangely enough i have never in my life got food poisoning from any BBQ ever.  Maybe from 1 too may beverages at one but never from the food.  


This could also come from the fact that there is so much work with a BBQ for those of us that are complete novice to them that were afraid that if we spend too much time fiddling with charcoal and whatnot the sun will have gone in and we will have to cook the food indoors anyway.


Anyhow this is one of those classic BBQ because this was not cooked on a grill but in my oven, using BBQ seasoning to flavor them however they were eaten AL fresco, so that must count for something right? 


If your brave enough, fire ahead but this is my BBQ food.

3 skewers per serving


Ingredients


2 chicken breast
1 onion halved and slices peeled from it
1 bell pepper
1 tin of chopped pineapples
2 Tbl of BBQ seasoning
Salt and pepper
Spray oil


Directions


Chop the chicken into medium sized chunks.  Chop the peppers into large chunks.  In a bowl mix the chicken, peppers, onion and pineapple.  Add in the seasoning and pour some pineapple juice over the mix.  Add salt and pepper.  Cover with cling film and refridgerate for 1 hour.


Preheat the oven to gas mark 5. 


Remove from fridge and slide a piece of either meat, veg or fruit onto the skewer, alternating between each. If using wooden skewers, soak in warm water for a couple of minutes before hand.  Repeat process until all of the mix is used up on the 6 skewers. 






Place the skewers on a baking tray and mist with a little spray oil.  Place in the oven for 15 minutes.  Then pump up the heat to gas mark 8 for 4 minutes just to char the veg. 






I served this with homemade Potatoe salad with bacon and a side salad.

Summer Burgers

The Sun is Still Here




Hooray for more sun shine.  I actually feel like a new person now after a good dose of vitamin D.  Well i never got round to doing the BBQ but i really craved burgers today.  Juicy mince, cheese, fried onion and a bun and i thought im going to have it. 


I just love the smell of burgers and sun cream together.  If over the weekend your looking for meaty get together food this is definitely one to try.

Serves 8 


Ingredients


For the burger


1 pack of Dunnes, Superquinn typically 95% Lean Mince
1 Egg white
1 tsp of salt 
Black ground pepper
1 tsp of Cumin
1 tsp of Sweat Paprika 
1 tsp of Worcester Sauce
Spray Oil




For the Buns


1 pack of Aldi Soft Crust Buns
2 Tbl of Tomato Ketchup
2 Tbl of Weightwatchers Salad Cream 
2 Slices of Low Low cheddar cheese 
1 Red onion sliced


Salad for garnish


Directions


Mix the mince,  egg white and all of the herbs and spices together and set aside in the fridge for 20 minutes.


In the meantime, in a non stick pan mist with a little spray oil.  When hot, add the sliced onion and cook on a medium heat until soft and slightly browning.  


Remove the onions from the pan and set aside for later. 


Remove the mince mix from the fridge and divide the mixture into 8 burgers.  Mist pan with spray oil and when hot add in the burgers.  Cook over a medium heat for roughly 6 minutes.  Do not use a spatula and squish the juice from the burger just leave them as they are.  Turn over the burger and cook for another 4-5 minutes.  Remove from the pan and set aside.






Mix the tomato ketchup and the salad cream together.


Half each bun and place soft side down for around 2 minutes.  Remove from heat and using a knife spread some of the tomato and salad cream mixture on the buns, add the burgers, divide the cheese slice into 4 each and place a quarter slice on top.  Add the caramelized onion and top with other half of bun.


Repeat with remaining burgers


Serve with a side salad.

Here comes the sun, yes, in Dublin today it was 18 degrees. You heard me i nearly had to put sun block on, well not quite but it was beautiful, sun shining, lawnmowers going, (not mine) and the smell of (Irish) summer is on the air.


That means that i didn't want to cook today, however, i still needed food and there was my sweet tooth aching and i thought "I need fruit" but it couldn't be all healthy so i mixed it up.   


Now i know that this is not a recipe, because everything is store bought and can be served within 15 minutes.  I also know that most of you will say that's nothing new, but on the off chance that one of you is only starting off on your journey and is unclear about what level of treats one could have while doing Weightwatchers, here's one that might help you out. 




Fruit meringue

Serves: 2
Preparation Time: 15 minutes

Ingredients

  • 2 Store bought Meringue nests, I bought these in Lidl
  • 2 pots Greek style low fat yogurt, each pot is 2 Propoints but you could swap this for a yogurt with a Weightwatchers Propoints value of 1 for a 3 Pr
  • 2 Flake 99
  • Fruit mixture of choice
Instructions
  1. Place store bought meringue nest on a plate Divide 1 yogurt pot between the 2 nests
  2. Chop the fruit to your liking and add on top of the nests

  3.Divide another pot between the 2 meringues on top of the fruit
  4. Sprinkle a flake 99 over  each nest
