Weightwatchers Spicy Rotisserie Style Chicken

Weightwatchers Communion Recipe 







Firstly i must apologise for the quality of the pictures, im afraid my camera has gone A.W.O.L so im left using my phone as a camera and this does not do any form of justice for this recipe. 


So Communion season is nearly upon us and i know a lot of people this year are celebrating at home and having family get together's.  Days like these can prove difficult for us Weightwatchers folk and trying to cater for most peoples taste can be difficult. 


If i go to any of these type of parties i love meaty dishes with rice or pasta not necessarily sauces but juicy meats.   So when i saw this posted from Mary of www.deepsouthdish.com i thought this is one that i have to try. 


This was so Juicy, meaty and just enough spice to suit most peoples taste that i thought i should post this one. Its actually really simple and quick and you let the meat do all the work which if you are the person catering for having family over this is perfect because you can tend to all your other chores or cooking in the meantime plus the majority of the "work" is done the night before. 


Im actually going to leave this ready for a friend of mine whose daughter is making her Communion in May and i would not do that if i thought it was just mediocre. 




Spicy Chicken Legs
Serves: 4

Weightwatchers Propoints per chicken leg: 5
This can also be used if your doing a Weightwatchers Healthy and Filling Day
Preparation Time: 20minutes

Marinating Time: Overnight if possible
Cooking Time: 2 Hours

Ingredients

  • 4 medium Chicken legs  (drumstick and thigh), skin removed and all visible fat trimmed off
  • 2 tsps Spices, paprika
  • 1 tsp Black pepper
  • 1 tsp, ground White pepper
  • 1 tsp Spices, onion powder
  • 1 tsp Cajun Spice
  • 1 tsp, leaves Spices, thyme, dried
  • 2 teaspoons Salt
  • 1 tsp Spices, garlic powder
  • Half a large onion peeled and chopped

Instructions
  1. Remove all visible fat and skin from the chicken legs
  2. In a bowl mix all spice together
  3. Rub the mix all over the chicken legs
  4. Cover and refrigerate overnight
  5. Preheat the oven to gas mark 2
  6. Place the legs and the onions on a baking tray and cover with aluminium foil.
  7. Bake in the oven for 1.5 hours basting at intervals
  8. Remove the cover and cook for the remainder uncovered
Serve with rice and garlic mushrooms

Weightwatchers Style Apple Crumble and an adventure

Healthy and Filling Apple Crumble that doesn't eat into your Weeklies!


Since reaching goal "horaah" ive been trying to stick to the Weightwatchers Healthy and Filling plan.  


Really just for a break from Propoint counting and i have to say i love it.  I was so nervous at first because it kinda looked complicated and the thoughts of limiting myself to only certain types of food was putting me off. 


Especially considering how much of a sweet tooth that i have i was wondering if i restrict myself will it lead to a complete and utter break out.


Then i read that you can have a weightwatchers style Apple Crumble.  I made it but in my opinion it was a bit bitter and didn't really cure that sweat tooth of mine.  So a couple of adjustments later and i have found a way to Niptuck this Crumble in a Weightwatchers fashion that really satisfied me.  


The secret........ Diet 7up!


I know odd but it really works and its gorgeous. 


Now this week as been a bit of a break out week for me because i was on holidays and here's where the adventure begins. 






Work outs? Well me and them don't really go well together, ill walk anywhere at all but actual workouts loose my concentration seriously quickly and i often find that i actually start to clock watch a lot and as much as i always feel great afterwards, at the time, i don't really enjoy it. 


So i decided that i was going to do something different, so i did.  I booked a holiday here in rainy, cold and windswept Ireland and booked us in to go Surfing. 


Yes the weather was its usual changeable self, no i had never ventured as far as surfing before and the thoughts of getting into a wet suit made me nervous and i must add that getting into the wet suit was a workout in itself.  However, this adventure was one of the best i have ever attempted in my life.  2 hours of complete laughter, with the theme tune of Jaws ringing in my ears do dum da dum da dum you get the picture.


Well i have to say that nobody cared how we all looked the instructors were excellent and didn't mind at all that i don't know my left from my right and generally did the opposite of what i was supposed to be doing they got that this was fun.  


I left the water, warm, worn out and a smile from ear to ear.  I will definitely be doing this again this summer as i think i have caught the buzz although waves i did not catch many but hope to in the near future. 


If anyone is looking for a getaway with a different this is the place to go, or if travelling to Ireland and want to see some spectacular scenery and catch a wave or 2 Bundoran in Donegal is the place to especially if you have children and if your looking for a surf school try out Turf n Surf you wont be disappointed.

Anyway back to the Apple Crumble, i added raspberries to this but its up to you if want to.  If your not doing a Weightwatchers Healthy and Filling day this whole dish works out at 3 Weightwatchers ProPoints.  Of course i added some 0% yogurt which is free and i topped it off with a 99 Flake which worked out at 1 Weightwatchers Propoints. 


Apple and Raspberry Crumble
Serves: 2
Preparation Time: 50 minutes

Ingredients

  • 4 fl oz or 120 mils of 7Up Free 
  • 3 tablespoons Sucralose-based sweetener, sugar substitute, Splenda, canderell or to your liking
  • 40 grams Oats, raw i used 1 pack of Flahavans Quick Oats
  • 4 tablespoons Raspberries, raw
  • 4 large, (3-1/4" dia) Apples, raw, without skin i used Pink Ladies 
  • 1 tbsp Spices, cinnamon, ground

Instructions
  1. Preheat the oven to gas mark 5 
  2. Peel and slice the apples 
  3. Wash the raspberries and add to the apples 
  4. Place Raspberries and Apples in a bowl
  5. Add the Splenda and cinnamon 
  6. Add the diet drink 
  7. Stir the mixture until all fruit is covered 
  8. Sprinkle the Porridge Oats on top.
  9. Transfer to a baking tray 
  10. Place in the oven for 20-30 minutes (depending on your oven)
  11. Remove from oven and allow a few minutes to cool slightly

Weightwatchers French Toast

Weightwatchers French Toast, Rashers and Maple Syrup with mushrooms and tomatoes for 8 Weightwatchers Pro Points

Well my camera seems to be taking a holiday or sick leave because i can't find the photo's for the French Toast but it was just so delicious that i thought i would share the recipe anyway because its the perfect breakfast for Sunday mornings or even better Sunday brunch for those that get lie ins (i wish i was one of them)

A portion of this works out at 2 slices of French Toast, 2 rashers/bacon and maple syrup but i added fried mushrooms and tomatoes to this and it was really filling.

If your having a Healthy and Filling Day this will only work out at 1 Weightwatchers Pro Points per serving which is really worth it, but if you are going to make it, do it for lunch as its quite a substantial meal and maybe a bit too heavy for breakfast (as if)


French Toast

Weightwatchers Pro Points per Serving 8
Weightwatchers Pro Points per recipe 16
Serves: 2
Preparation Time: 30 minutes

Ingredients
  • 2 medium Egg
  • 1 tablespoon Maple syrup (100% maple)
  • 1 tablespoon Milk, cow's, fluid, 1% fat
  • 1/4 teaspoon Flour, white
  • 4 strips Pork bacon, formed, lean meat added, cooked
  • 1/4 teaspoon Salt
  • 4 slices Weightwatchers bread
  • Spray oil
Instructions
  1. In a non stick pan add the bacon and fry until crisp 
  2. Remove from pan and set aside
  3. In a deep bowl mix the eggs, flour, salt and milk together with a whisk
  4. Lightly spray the non stick pan with spray oil
  5. Dip a slice of bread one at a time on each side into the mix and immediately place onto the hot pan
  6. Allow the bread to crisp on one side and then flip over
  7. Repeat until all the bread is fried on both sides
  8. Serves 2 Slices of French toast with 2 rashers on each plate
  9. Pour 1 tsp of Maple Syrup over each portion

Weightwatchers Real Chips, baked beans and savory gravy mince

Real Chips, baked beans and savory gravy mince 


Now who could refuse this? exactly, no one.


Proper beans, proper chips with dippy, juicy gravy mince and all for a Weightwatchers Pro Points value of 11.


Now just look at the size of this dinner, it ain't anywhere near small in fact i was stuffed and still am. 


This is more of a comfort food concoction rather than a recipe but every now and then i love this type of food.  Fast, sloppy, meaty and a blast from the past if you get me. What's even better about this dish is that not only is it a decent meal for 11 Weightwatchers Pro Points but if you having a Healthy and Filling day, this whole plate will only cost you 1 Weightwatchers Pro Points.  Now that has to be worth a look.


So i know what question is on your mind. How does one have real chips while on a Weightwatchers program?  


Well say hello to my little friend 




This is the wonder machine.  I have mine about 3 years now and it has been used and used and used.  


There is actually a whole range of these out now.  They go by the name Actifry, Airfryer and other such names. 


There actually on sale in www.argos.ie ACTIFRY at the moment.  This seems like a lot of money but really the chips are so gorgeous from this.  All it takes is one spoon (which comes with the machine) of oil or i just use my spray oil, give it 30 minutes and bliss.  


No more trying to contend with oven chips cause lets face it sometimes its like eating cardbord.  These are definitely worth it.  When i first got mine i told my leader and she was like "You paid what" and now she's like "can't live without".  So if you want to invest in something that will help you stay on track for years to come this is the investment your looking for.


OK the advertisement section of the program is now over, now back to these chips. 


If you want comfort food then this is the food for you.


Serves 3


Weightwatchers Pro Points per serving 11


Weightwatchers Pro Points per recipe (this is more of a concoction) 33


Ingredients


3 medium potatoes of choice, peeled and chipped


1 pack of Superquin lean beef mince, (Typically 95% lean beef) this is so much nicer than turkey mince and super lean.  Its on special at the moment 2 packs of 365g each for 8 euro.  Each pack works out at 9 Weightwatchers Pro Points which is brilliant. You could have a mince party! 


3 containers of heinz beans Snap Pots, the ones in the microwavable cups.  Each container corks out at 4 Weightwatchers Pro Points and there's lots in a pot, add about 1/3 of a can of beans. 


1 onion, chopped


1 oxo cube


1 teaspoon of gravy granules mixed with boiling water until you get the desired consistancy


Arrowmat seasoning


Salt and Pepper to taste


Spray oil or oil as directed


Vinegar


Directions 


Place the chips into the Actifry spray with spray oil or oil as directed.  Add salt and vinegar as desired.














Close the actifry and set on 30 minutes.


In a nonstick pan, mist with a little spray oil. Add mince, onion and season with arrowmat, salt and pepper.  Cook over a medium heat until meat starts to brown.  Crumble the oxo cube over the meat. Continue to cook for about 7-8 minutes. 


Once meat is completely browned mix up the gravy granules and boiling water, stir until granules have dissolved and pour through a tea strain or sieve into the mince. Cover and keep on a low heat for about another 6-7 minutes.


Place the snap pots in the microwave as directed.


The actifry should be to say those chips are ready and plate up
