I am the Queen of Tarts and by that i mean eating them!
I just love jam or lemon tarts. There's actually a pack you can buy with both in it and i just loved them in my pre weightwatchers life.
One or 5 of them used to be a real treat and then the other day it was the first time since starting weightwatchers (over 5 years)that i was faced with the problem of a pack of them being probed into my face and i felt it really difficult to refuse. So i caved in. They were delicious even at 5 Weightwatchers Pro points for such a small little treat. In reality they should be called tart lets because there 3 mouthfuls at best but delicious mouthfuls all the same.
It did get me thinking how hard it would be to make them. Seen as i have a pastry recipe that works out at 2 Propoints for the casing which is pretty good.
These turned out really lovely. Im a total fan of jam and lemon curd and both were scrumptious and for 3 Weightwatchers Propoints for the jam and 4 Propoints for the Lemon curd one's i was really surprised. These are really simple to make.

· 90 grams Flour, white
· 3 tablespoons Sugar substitute, low-calorie, powdered
· 3 Tablespoons Flora Pro Active
· 12 tablespoons Jams, preserves, marmalades, lemon curd, low sugar (all
flavors)
(You could also use
Lemon Curd instead of jam but it would be an extra point for each tart but I think
for a lemon tart it would be worth it)
Instructions
1.
Pre heat the oven to gas mark 4
2.
Mix the flour, powdered sugar (and flora pro active together
Combine into fine breadcrumbs
3. Take a teaspoon and roll out each teaspoon so that it's really
thin.
4. Pat down into each case
5. Bake in the oven for 10 minutes
6. Remove from the oven
7. Place a small Tbl of jam or lemon curd into each tart
8. Return to the oven for another 8 minutes
9. Remove from the oven and allow to cool for about an hour or
until completely cooled.
Serve
and enjoy the Niptuck way so you don't have too!

This is a lovely idea - I didn't think the old jam tart could be made less naughty. The lemon curd tart does sound really inviting. I've yet to find a way of making a less indulgent lemon curd that really works, though.
ReplyDeleteIm the same with lemon curd and i have destroyed many a good lemon trying lol. I just had a look at your blog and boy is there some beautiful desserts up their. I just loved the idea of the coconut rice cake yum. I also had a look at profile and the part about "go ask alice" really made me laugh because that is what i consider my honeymoon song.
