Chocolate Cake

Chocolate, my first love.



Moist chocolate cake topped with a layer a dark chocolate with a hint of mint, served with whipped cream and raspberries, then it's drizzled with white chocolate.  4 Weight Watchers Propoints including the cream!

After this week I will need to detox myself from all of the treats that this week has and will lead to. 

I will not be giving up chocolate or sweat treats for lent, instead I plan on giving up drinking fizzy drinks.  A challenge that I am not looking forward to.  I really do wish that I drank tea and coffee, but this challenge I really want to succeed in. 

I have come to the conclusion, with lent being upon us, that changing how or what we eat or drink is not the challenge at all for me, but, changing habits is.

I know that I can change my habits because I have done so, however some of my habits have lasted longer than a lot of Love affairs.  

Like my love of treats, fizzy drinks, mainly Pepsi Max have been my love for at least half of my life. 

Treats and fizzy drinks I have gotten a handle on " moderation not deprivation" however, diet fizzy drinks I have no control over.  I really don't drink half enough water.  

So, my aim is to drink at least 2 litre's of water per day.  I think I will need a lot more than ashes to do this but I will try.  I have also payed for Hot Yoga classes, hopefully this will be of benefit to me.

What are your aims for lent, If you have any, I would love to know. 

I can't remember exactly but I think that I got this recipe from www.weightwatchers.ie although I can't find it now.  I did make a few adjustments but I think that it was worth it. 

This is very easy to make so if you new to baking, try this out. 

I used a heart shaped cake mold which i bought in Lidl for 4.99 Euro but you can use any cake mold you choose. 




So if your staying in tomorrow but want to celebrate Valentines Day and want to impress someone special in your life here's the recipe.

Serves 10 

Ingredients 

225g boxed cake mix of Betty Croker Devil's Food Cake Mix (that's half of the box)

80mls of water

5 Tbl of low sugar raspberry jam

2 egg whites

75g dark  chocolate

25g white chocolate

1 Tbl of almond milk

Raspberries for decoration


Method 

Pre heat the oven to GM 5 or 190 C

Add the egg whites, water and 2 Tbl of jam to the cake mix

Mix with an electric mixer until smooth

Pour into the cake mold, do not over fill the cake molds because this cake rises, about 3/4 full is plenty

Place on the top shelf of the oven for about 35 minutes

You can look into the oven to see if there rising but try not to open the oven as this delays the baking process

Turn out unto a wire rack, (I used the rack from my grill) and allow to cool. 

Take a pan of boiling water, lower the heat to simmer of low and in a delph bowl (not a plastic one) break up the chocolate in the bowl and place the bowl untop of the simmering water and allow the chocolate to melt stirring it along the way 

This will take about 6 minutes, remove from the heat, away from the simmering water and allow to cool for about 1 minute

Stir in the 3 remaining Tbl of jam and stir until the jam is mixed thoroughly.  

Spread evenly over the cake, decorate with raspberries.  Melt the white chocolate in the microwave for 30 second intervals, adding the milk and stirring in-between. 

Drizzle the white chocolate over the entire cake and raspberries.  Place in the fridge for about an hour. 

Serve with some light squirty cream from Lidl for 1 extra pro point.

    I would consider myself an addict when it comes to diet fizzy drinks! I mean 2lt of diet coke/club orange diet etc was no problemo a day if not more! I gave up diet coke back in September and then on February 1st I decided to give up diet fizzy drinks all together for 4 weeks (in reality I am giving them up for longer but it seemed like a good start)! The first 3 days were hard because I loved having my diet 7up when I came home but now it is grand! I'm drinking my water and lots of it, using a dash of sugar free tropical mi-wadi etc :) Best thing of all, I don't seem to be hopping the car everyday and driving 10 miles to get to tesco to buy my drinks which also means I'm not impulse buying food and wasting petrol so have to say I am very happy that I took on this challenge! So now I'm off crisps/choc since Jan 1st and fizzy drinks since feb 1st and so far so good :)
